In Early Spring when the days start getting above freezing, we head out into the snow covered woods to hand tap over 200 tall maine maples to collect the pure, clear fresh sap. we boil it over a wood fire until it 's a rich amber and bottle it fresh and hot. our syrup is sweet and pure with notes of vanilla and a hint of smoke.
